Missing Angel Juan

MISSING ANGEL JUAN IS THE story of how Witch Baby goes on a journey to find her boyfriend Angel Juan in New York City. She encounters much magic and danger along the way—and also a lot of really good food!

VEGETARIAN LASAGNA

1 box lasagna noodles

3 portobello mushrooms, sliced

4 small or 2 medium zucchini, sliced thin lengthwise

2 cups ricotta cheese

1/2 cup Parmesan, shredded

1 cup basil, finely sliced

2 large eggs, lightly beaten

1 tsp each salt and pepper

Basic Tomato Sauce (recipe follows) or 1 1/2 jars organic marinara sauce

1 cup mozzarella, shredded

Put water on to boil for noodles. Prepare the Basic Tomato Sauce (recipe below). While sauce simmers, prepare the vegetables. Set aside. Put noodles in to boil, cooking according to package instructions. In a medium bowl, mix together the ricotta, Parmesan, basil, eggs, and salt and pepper. Set aside.
